5 Must-Eat Foods in Busan (and Where to Find Them)

Busan's food leans coastal and punchy, and a few of its dishes are hard to find done this well anywhere else. Here are the ones to prioritize, plus where to look.

1. Dwaeji gukbap (pork soup rice)

Busan's signature comfort food: a milky pork-bone broth over rice, seasoned at the table with salted shrimp and chives. There's a whole "gukbap street" near Seomyeon devoted to it. Cheap, filling, and open late, which makes it the classic end to a night out.

2. Ssiat hotteok (seed-stuffed pancake)

The Busan twist on a Korean street classic: a fried sweet pancake split open and packed with seeds and nuts. Look for it around BIFF Square in Nampo, where the queues tell you which vendor to trust.

3. Fresh hoe (raw fish)

Head to Jagalchi Market, pick your fish from the downstairs tanks, and have it prepared upstairs. It doesn't get fresher. Go with a group and share, because a single plate is more than one person wants.

4. Milmyeon (wheat cold noodles)

A Busan invention, born from post-war ingredient shortages when buckwheat was scarce. Chewy wheat noodles in cold broth, and exactly what you want on a humid August afternoon.

5. Eomuk (fish cake)

Busan is Korea's fish-cake capital. Grab skewers hot off a stall with a cup of broth, or try one of the modern fish-cake bakeries near the station that turn it into pastries.

6. Dongnae pajeon (seafood scallion pancake)

Busan's take on pajeon: a thick, chewy pancake loaded with green onions and seafood. It was a Dongnae specialty once sent as tribute to the royal court, and it's still best eaten hot with a bowl of makgeolli in the Dongnae district.

7. Jogae-gui (grilled shellfish)

A Busan night-out classic. A tabletop grill piled with clams, scallops and mussels, cooked in front of you. The seafront strips around Gwangalli and Millak Raw Fish Town are the go-to, ideally with the Gwangan Bridge lit up across the water.

Where to eat, by area

  • Seomyeon — the "gukbap street" and late-night eats. The city's food heart.
  • Nampo / BIFF Square — ssiat hotteok and street snacks in the old downtown.
  • Jagalchi — raw and grilled seafood straight off the market floor.
  • Gwangalli — seafood restaurants and grills with the bridge view.
  • Haeundae Market — fish cake, snacks and a short walk to the beach.

Tip: many of these are market and street foods where a little cash helps. Pair a food crawl with a walk through Gamcheon Culture Village or the Jagalchi waterfront, or join a guided food-and-city tour to hit the highlights without the guesswork.
